Black tea is made with fermented tea leaves and has the highest content of caffeine of other types of tea. Black tea creates the basis for flavored teas such as chai and certain instant teas.
Black tea is more oxidized than green, white, and oolong teas and generally has a stronger flavor, which is retained for several years.
When brewing, it should be steeped in water brought up to 212 degrees F (100 degrees C) for 3 - 5 minutes. Whole-leaf black teas, and black teas that will be served with milk or lemon, should be steeped for 4 - 5 minutes. More delicate black teas, such as Darjeeling, should be steeped for 3 - 4 minutes.
